Ingredients: 1) Olive oil - 2 tbsp. 2) Tuna steak - 7 oz (200 g).
For the Guacamole: 1) Flesh of 1 ripe avocado. 2) White part of 3 scallions. 3) Coriander(cilantro) leaves - 2 tbsp. 4) Jalapeno peppers - 1-2, with core and seeds removed. 7) Juice of 1/2 lime. 8) Extra coriander(cilantro) leaves (to garnish).
Also needed: A heavy griddle pan.
Instructions: 1) Preheat the oven to 400 degree Fahrenheit.
2) Sprinkle a little olive oil over the baguette pieces.
3) Place the oiled baguettes on a baking sheet and bake for 10 minutes or until lightly browned.
4) Spread out each slice with tapenade. Top with the capers/cherry tomato quarters/cucumber slices. Serve warm.

Also needed: 1) A baking sheet.

Ingredients: For the Iced Christmas Trees dough: 1) Plain flour - 3 1/4 cups (14 oz./392 g). 2) Butter - 3/4 cup (7 oz./168 g), chopped. 3) Icing sugar - 3/4 cup (3 1/2 oz./75 g). 4) Egg - 1. 5) Egg yolk of 1 large egg. 6) Salt - A pinch. 7) Cream - 2 tsp. 8) Sugar sprinkles, candied cherries and blanched almonds (for decoration). 2) Pour flour onto a working surface. Sift and make a hollow in its centre.

Ingredients: For the cookies: 1) Plain flour - 3 cups (13 oz./375 g). 2) Icing sugar - 1 3/4 cups (8 oz./225 g). 3) Cold unsalted butter - 1 stick (4 oz./115 g), cut into pieces. 4) Water - 1 tbsp. 5) Egg - 1, lightly beaten. 6) Some extra icing sugar (for decoration).
Instructions: 1) Pour 1 cup of icing sugar into a bowl. Sift it with the flour.
2) Use your fingertips to rub in the butter until the mixture looks like bread crumbs.
3) Add the water and egg. Combine the ingredients of the bowl well to make a firm dough.
4) Enclose the mixture in plastic food wrap and refrigerate for about half-an-hour.

Also needed: A microwave, a small bowl, an 8" deep round cake pan, baking parchment, a large mixing bowl, a foil sheet, a skewer and a wire rack.
